Shepley set up his butcher’s business in Drayton
15 years ago. Since then he has opened a shop in
Madeley near Keele. His meat is bought from the local
livestock
market and Scott has noticed another effect of the
supermarkets. There is now at least a generation
of people who buy their meat ready prepared and wrapped
off the shelf. They do not know that a leg of lamb
is a leg, or what rump steak or a shoulder of pork
are. He has also noticed that generally speaking,
people
prefer their meat with less fat now.
