As
the trade routes with India and the Far East were opened
up, the price of exotic
spices fell. It is not known why ginger is associated
with Market Drayton. Billington’s claim to have
been making gingerbread since at least 1817. The recipe
is a closely kept secret, but Drayton gingerbread has
won worldwide acclaim. William Chester began making it
in 1850 and won an award at an international exhibition
in London. The correct way to eat gingerbread is to cut
it into slices and dunk it in either port or sherry!
